The UI Mode setting lets you choose between Auto, Mobile and Desktop.
Open Settings at the top right of the editor.
Under Interface, open the UI Mode dropdown.
Select Auto, Mobile or Desktop.
It is separate from Layout, which provides the Simple and Professional options.
